Grandma's Applesauce
4 C. pared, chopped apples
1 C. sugar
¼ C. orange juice
½ tsp. cinnamon
1 small dollop butter
¼ tsp. ground nutmeg
As you pare and chop the apples into
pieces, put them in a 2 quart sauce panand
sprinkle with the orange juice to keep them from turning brown. Add the
sugar, taking into account the tartness of the apples, and adjusting theamount
of sugar to taste. Add cinnamon and nutmeg, mixing with large spoon to coat
the apple pieces well. Cook gently over a medium heat, stirring frequentlyto
keep from sticking. When tender, remove from heat and mash with fork orpotato
masher to desired consistency. Taste for sweetness and add more sugarif
desired. To give extra richness to the flavor, add a small dollop of butter
and stir completely until
completely melted and thoroughly incorporated into thesauce.
Allow to cool for a while, then pour into lidded plastic container,

Apple Crunch Salad
2 (3 oz. Ea.) pkgs. Strawberry flavored
gelatin
¼ tsp. cinnamon
1 C. diced & peeled apples
2 C. boiling water
½ C. diced celery
1 ½ C. apple juice or cider
¼ C. chopped pecans
Dissolve gelatin in boiling water.
Add apple juice and cinnamon. Chilluntil
slightly thickened. Fold in apples, celery and nuts. Spoon into6
cup mold.
Cinnamon Applesauce Salad
¾ C. red cinnamon candies
1 C. hot water
1 - 3 oz. Pkg. red raspberry gelatin
1 ½ C. applesauce
1 - 8 oz. Pkg. Cream cheese, soft
½ C. mayonnaise
½ C. celery, chopped
Add cinnamon candies to hot water. Bring to a boil, stirring to dissolve.Pour over gelatin, stirring until the gelatin is dissolved. Add applesauceand blend well. Pour half of this mixture into mold that has been rubbedwith mayonnaise and chill until set. Mix together the softened creamcheese, mayonnaise, and celery and spread over the set gelatin mixture.
Pour remaining gelatin mixture on top
and chill until set. Unmold toserve.
